Mini Cheesecakes
Bite-sized cheesecakes – great for potlucks and parties!
- 1 Small Box of Vanilla Wafers
- 2 8 oz Packages of Cream Cheese
- ¾ cup Sugar
- 2 Eggs
- 1 Tbsp Vanilla
- 1 can Cherry Pie Filling

Crush wafers and place ½ tsp in miniature 1 ¼ inch paper liners

Cream together the cream cheese, eggs, sugar, and vanilla.

Fill each cupcake almost to top.

Bake 15 minutes at 350°.

Cool. Top with dab of cherry pie filling.
