Mini Cheesecakes

Bite-sized cheesecakes – great for potlucks and parties!

  • 1 Small Box of Vanilla Wafers
  • 2 8 oz Packages of Cream Cheese
  • ¾ cup Sugar
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 1 can Cherry Pie Filling
  1. Crush wafers and place ½ tsp in miniature 1 ¼ inch paper liners

  2. Cream together the cream cheese, eggs, sugar, and vanilla.

  3. Fill each cupcake almost to top.

  4. Bake 15 minutes at 350°.

  5. Cool. Top with dab of cherry pie filling.
