Cranberry Salsa

A delicious, fresh salsa that can add tangy sweet flavor to a dip, burritos, rice & beans, or anything else that needs some zip. (Comes from Prevent and Reverse Heart Disease Cookbook.)

Equipment

  • Food processor

Ingredients

  • 12 oz Cranberries (Fresh or Frozen)
  • 3 Tbsp Lime Juice (fresh)
  • ½ - ¾ cup Pure Maple Syrup
  • 3-4 Green Onions (thinly sliced)
  • ½ Large Jalapeno (seeded and chopped)
  • 2 cups Fresh Cilantro Leaves (not chopped; optional if you don't like them)

Instructions

  • Place all in a food processor and process until coarsely chopped. Chill
  • (Note: Drain the cranberry juice but save it to drink or add to sparkling water for color & flavor!)
