Mini Cheesecakes

Bite-sized cheesecakes - great for potlucks and parties!

Equipment

  • Mini muffin tin
  • Mini 1 ¼ inch paper liners

Ingredients

  • 1 Small Box of Vanilla Wafers
  • 2 8 oz Packages of Cream Cheese
  • ¾ cup Sugar
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 1 can Cherry Pie Filling

Instructions

  • Crush wafers and place ½ tsp in miniature 1 ¼ inch paper liners
  • Cream together the cream cheese, eggs, sugar, and vanilla.
  • Fill each cupcake almost to top.
  • Bake 15 minutes at 350°.
  • Cool. Top with dab of cherry pie filling.
