Bite-sized cheesecakes - great for potlucks and parties!
- Mini muffin tin
- Mini 1 ¼ inch paper liners
- 1 Small Box of Vanilla Wafers
- 2 8 oz Packages of Cream Cheese
- ¾ cup Sugar
- 2 Eggs
- 1 Tbsp Vanilla
- 1 can Cherry Pie Filling
- Crush wafers and place ½ tsp in miniature 1 ¼ inch paper liners
- Cream together the cream cheese, eggs, sugar, and vanilla.
- Fill each cupcake almost to top.
- Bake 15 minutes at 350°.
- Cool. Top with dab of cherry pie filling.
