Lemon Gems

A lovely, luscious bar cookie!

Crust

  • 2 cups Flour
  • ½ cup Sugar
  • 1 tsp Grated Lemon Peel
  • 1 cup Butter, softened (2 sticks)

Topping

  • â…“ cup Flour
  • 1 ½ cups Sugar
  • 4 Eggs
  • ½ cup Lemon Juice
  • ½ tsp Baking Powder
  1. Heat oven to 350°

  2. In a 13 inch by 9 inch pan, combine flour, sugar, lemon peel.

  3. Cut in butter until it resembles coarse crumbs. (Can be done in a food processor.)

  4. Pat crumbs evenly and firmly in pan.

  5. Bake 20-25 minutes until lightly brown.

  6. In food processor, combine topping ingredients.

  7. Cover and process 5 seconds.

  8. Scrape down sides and process 5 seconds more.

  9. Pour over partially baked crust.

  10. Bake 20-25 minutes until lightly brown.

  11. Cool in pan over wire rack.

  12. Cut into squares (2 inches by 2 inches).

  13. Sift powdered sugar overtop while still warm.
