Betty's Holiday Yams

A yummy variation on the yam theme!

Ingredients

  • 2 17 ounce Cans of Yams (or 1- 40 oz can of Bruce's Yams)
  • cup Brown Sugar (packed)
  • cup Chopped Pecans
  • ½ tsp Cinnamon
  • ¼ tsp Salt
  • 2 Apples; peeled and thinly sliced (Granny Smith preferred. 2 large/3 medium)
  • Salt (to taste)
  • ¼ cup Butter
  • ⅛-¼ tsp Vanilla (to taste)
  • Miny Marshmallows (optional)

Instructions

  • Heat oven to 350°
  • Drain yams.
  • Peel and slice apples.
  • Mix apples, cinnamon, salt, brown sugar, and pecans.
  • Add vanilla.
  • Layer yams with apple mixture in casserole dish.
  • Dot with butter.
  • Bake 30 minutes.
  • If desired, cover with marshmallows and broil until they are light brown. (Note: will brown quickly. 1-2 minutes.)
